Homemade Sweet Potato Chips with Caviar and Creme Fraiche
The mild sweetness of these potato chips balances perfectly with rich creme fraiche and salt-and-sea-kissed caviar.
Ingredients:
2 long (2-inch-diameter)
Sweet potatoes
Vegetable oil for frying
Flaky sea salt
Instructions:
Fill a large bowl with water. Peel and thinly slice the sweet potatoes into rounds.
Place the sweet potatoes in the water and let stand 1 hour.
When ready to fry, drain the sweet potatoes and pat them dry between clean dish towels. Heat the oil to 365F in a deep fryer or large, heavy saucepan. Line 2 large sheet pans with paper towels. Working in batches, fry the sweet potatoes until golden brown and crisp, about 3 minute. Transfer to the paper towels and drain. Sprinkle with flaky sea salt.
