About 40 miles from Nashville in Rory Feek’s home base of Columbia, Tennessee, awaits a sandwich with your name on it at his sister’s diner, Marcy Jo’s.
In our October 2020 issue we caught up with Rory Feek to see how it’s going. The singer-songwriter has a new RFD-TV show about raising his daughter after his wife’s death, working on his farm, and building his own “Mayberry” outside of Music City. We’re guessing when he takes a break for lunch he likes to head over to his sister’s place for one of these chicken salad sandwiches.

Marcy Jo’s Muletown Chicken Salad
Ingredients
5 – 6 boneless, skinless chicken breasts
2 stalks celery, split down the middle and chopped fine
2 Granny Smith apples, peeled and chopped
¾ cup grapes, cut in half
2 teaspoons garlic salt or powder
Pepper to taste
1½ cups Miracle Whip
1 cup chopped pecans (optional)
Instructions
In a large saucepan, cook the chicken breasts in water till tender and no longer pink in the center. Drain and let cool. In a large bowl, mix together the celery, apples, grapes, Miracle Whip, pepper, and garlic salt. Chop the chicken into small bite-sized pieces and toss in a bowl with the remaining ingredients. Mix well. Add in pecans if desired and adjust flavor with more pepper, garlic salt, or mayo to your liking. Serve on homemade toasted bread with lettuce and sliced tomato. Makes 8 – 10 sandwiches.
