These cocktails, one of which is exclusively available in Texas, are a fiery pair.
Although we’re partial to straightforward, easily composed cocktails, every once in a while only an innovative, compelling drink will do. Water Grill, originally from Los Angeles, with a Dallas outpost, has just the pair of cocktails to fit that bill, including The Lone Star, a boot-scootin’ libation available only in Texas.
Campfire Sling
2 ounces Rittenhouse Rye (or preferred rye whiskey)
¼ ounce maple syrup
3 dashes Fee Brothers Aztec Chocolate Bitters (or preferred chocolate bitters)
Orange twist, for garnish
Add all ingredients to a small rocks glass. Lower a large cube in the drink and stir. Light a wooden toothpick using a votive candle. Express the oils from the orange twist through the flame in the direction of the cocktail. Place the twist in the drink zest side up.
The Lone Star Cocktail
1½ oz Rancho Allegre Tequila (or preferred tequila)
½ oz Del Maguey Vida Mezcal (or preferred mezcal)
1 ounce yellow pepper puree (recipe follows)
¾ ounce lime juice
½ ounce agave syrup
Sliced jalapeño, for garnish
Ancho chile salt, for garnish (optional)
Add all ingredients to a mixing glass. Add ice, shake, and double strain into a coupe. Float a thinly sliced jalapeño and sprinkle ancho chile salt over and around the jalapeno.
Yellow Pepper Puree
3 large yellow bell pepper, diced
1 medium jalapeño, diced
1 tablespoon coriander seed, whole
Add all ingredients to a blender. Blend on high for 1 minute until smooth. Transfer to quart containers, label, and store in cooler.
