Treat yourself right this National Margarita Day by trying out these fresh takes on classic recipes from Cibolo Creek Ranch.
Guests gather for meals at long communal tables in an enclosed veranda at Cibolo Creek Ranch. Colorful Mexican masks hang from walls, and the view overlooks the property’s small lake.
The cuisine is Southwestern, with a fine Mexican flair — “elevated ranch” you might call it (as they do). Breakfast might be migas or bacon and eggs; lunch (dine in or packed for a picnic), chiles rellenos or fajitas; dinner, quail, axis venison, or pork tenderloin. Vegan and gluten-free options are available on request.
“It’s not unusual for the protein to be sourced directly from the ranch and the dessert to made at Cibolo bakery,” says Adam Blailock, reservations manager at the resort.

Don’t miss cocktail hour before dinner, when guests snack on classic TexMex fare like nachos or chips and freshly made guacamole and sip a Cibolo Sotol Margarita or two. “We serve this classic guacamole nightly in the spirit of enjoying the simple things in life: friends, family, good food, and beautiful skies — all of which can be found here at Cibolo Creek Ranch,” Blailock says.
Besides the usual array of wine, mixed drinks, and beer, guests can order a Cibolo Ranch Water, made using sotol — a spiky desert plan long used by Indigenous people to make tools and fermented drinks — along with a squeeze of fresh lime juice and sparkling mineral water. Marfa Spirit Company makes the liquor using sotol grown right at Cibolo Creek Ranch.

Cibolo Classic Guacamole
4 large avocados, pitted, peeled, and diced
3 medium Roma tomatoes, roasted, peeled, seeded, and diced
¼ red onion, minced
2 jalapeños, roasted, peeled, seeded, and minced
Fresh cilantro, chopped
½ lime, juiced
Salt, to taste
Pepper, to taste
Splash of orange juice
Preparation
- In a medium bowl, combine the avocado, tomato, red onion, jalapeño, lime juice, orange juice, cilantro, salt, and pepper. Mix until fully incorporated.
- Serve with tortilla chips.
- Enjoy!
Cibolo Sotol Margarita
2 ounces of Marfa Spirit Co. Sotol (tequila if you like it traditional!)
1 ounce of triple sec or other orange liqueur
1 ounce of freshly squeezed lemon juice
2 ounces of simple syrup
Preparation
- Combine ingredients in a cocktail shaker.
- Shake with ice until mixed.
- Dress glass with salt and/or slice of lemon.
- Pour over ice and enjoy.
