Beans are a staple item, and this easy Chipotle Baked Beans recipe comes from a special 100-year-old company.
Based in New Orleans, Camellia Brand beans is the first dried bean company in North America. It was founded by the Hayward family in 1923 and has remained under their direction for four generations. Today Vince Hayward is CEO.
“I feel so fortunate to work in a role that connects me with the consumers, our employees, stakeholders, and the city of New Orleans, so the fact that we’re turning 100 years old, it’s just a giant exclamation point,” Hayward says of Camellia Brand’s 100th anniversary in 2023.
Hayward gave a couple of great tips for cooking the family’s famous beans. “Always cook them low and slow, unless you have a pressure cooker, then that takes some time out. Also, after the beans have softened and reached the end of their cooking cycle, don’t be afraid to take some out, mash them up, and stir them back in. It creates a creamier, richer texture to the dish,” Hayward says.

Chipotle Baked Beans
Yields: 4 – 5 servings
Ingredients:
2 cups cooked Camellia Brand Navy Beans
1/2 red onion, chopped
1/4 cup dark brown sugar
1/3 cup ketchup
1 1/2 teaspoons yellow mustard
4 strips bacon, cooked and crumbled
1 1/2 teaspoons pureed chipotle pepper in adobo sauce
Directions:
Preheat the oven to 350 degrees. Combine all ingredients and pour the mixture into a casserole dish. Bake, uncovered, for 25 – 30 minutes or until bubbling.
