Chicken Thighs Alabama

(Serves 4 – 6)
Chicken
4 – 6 (4-ounce) bone-in chicken thighs
Salt and pepper, to taste
Smoked paprika, for garnish
Alabama White Barbecue Sauce
30 ounces mayonnaise
2¼ ounces apple cider vinegar
4½ ounces apple juice
2½ ounces spicy brown mustard
3 ounces horseradish
¼ teaspoon granulated garlic
¼ teaspoon smoked paprika
¼ teaspoon black pepper
½ teaspoon cayenne pepper
½ teaspoon salt
For the Chicken: Fire up the grill. Season the chicken thighs with salt and pepper. Grill chicken thighs over direct heat skin-side down for 4 minutes. Turn the thighs a quarter over and cook for another 4 minutes. Flip the thighs and pull off the direct heat, letting the chicken brown on the other side. Pull chicken and let it rest for a moment off the heat. Begin basting the chicken with Alabama white barbecue sauce (directions below). Place the chicken back on the grill until chicken is cooked through. Take the chicken off of the grill and cover with more sauce. Garnish with a sprinkle of smoked paprika.
For the Alabama White BBQ Sauce: Combine all ingredients in a bowl and mix. Refrigerate until needed.
