Chow Time: Miss in the Kitchen’s Steak Bites

“Living on a cattle ranch has taught me what it takes to get food on the table,” writes Milisa Armstrong, a married mother of three who’s based in Wyoming and runs the foodie blog, Miss in the Kitchen

“The weather plays such a huge role in how things go for farmers and ranchers. With droughts, cold, and extreme heat, it's all out of our control. I love having a part in getting a newborn calf on the ground and living; it is such a thrill.”

Since Armstrong plays an active role in the development of the cattle, you’d think she wouldn’t have time to whip up delicious dishes. But you’d be wrong.

“I used to be the cook for a ranch, and I tried to keep delicious and filling food in front of the guys that they would enjoy, and also keep them going strong because they work so hard,” Armstrong tells us. “Now I'm just feeding my husband and three boys, but I tell you, teenage boys can really pack away the food!  It's a full-time job keeping them filled up.”

When we asked her to give us a recipe fit for a hungry cowboy, she pointed us to her 2010 blog post on chicken fried steak.

She has a little fun in the piece when broaching the subject of gravy:

The gravy is the best if you make it with bacon grease.  Now, I can’t really fathom it, but I do realize not everyone eats bacon, and that leads me to believe that there may be folks who don’t keep a mason jar in the fridge full of leftover bacon grease. So if you are one of those folks, just use a couple of tablespoons of the oil that you are frying the steak in.

You can tell from the picture of the dish (and her bacon-tastic gravy ways) that Armstrong’s kitchen produces a steak basket much more delicious than what you’d get in any drive-through lane. Check out her full recipe here.
