Javier's habanero salsa

Ingredients

  • 5 medium tomatoes
  • 1 ½ pounds tomatillos
  • 6 habanero peppers
  • ½ medium onion
  • 1 dried guajillo pepper
  • ½ bunch cilantro (approximately 1 cup)
  • 2 teaspoons chopped garlic
  • 2 teaspoons salt
  • 1 ounce corn oil

Directions

Javier told me that this recipe originated with the guys in the kitchen, who like a very spicy salsa, and he now has this on the menu. It's definitely spicy. You'll love the beautiful orange color the habaneros give it.

1. Boil tomatoes, tomatillos, habanero peppers, onion, and guajillo pepper until tomatillos change color.

2. Drain water and discard. Put boiled ingredients in blender. Add cilantro, garlic, and salt and blend until smooth.

3. Pour into saucepan with corn oil. Bring to a light boil. Remove foam and serve warm.
