For a spirit created to embody its namesake and brandishing the motto “Let’er buck,” Pendleton Blended Canadian Whisky (approximately $25) is surprisingly subtle with very little burn. It’s also the official spirit of the Professional Rodeo Cowboys Association. Aged for 10 years in charred oak barrels then mixed with glacier-fed spring water from Oregon’s Mt. Hood, the brew is flavorful — practically requiring that you drink it neat, as a cowboy should.
